How to know when dinners expire?

I usually just use the 3 day rule like you do.I give opened sandwich meats a week after opening them. I don't think there is much science to it other than the natural ways. (taste, smell, inspecting it, etc.) There is info on the internet about how to freeze leftovers. I've kept lasagna for a few months after I made some one time by freezing it.
