Have we observed the polar areas of the sun?

All the pictures of the sun I have seen show the view as looking from Earth, but what about the polar regions above and below, does the sun have a north and south pole? What about those probes that were sent to take pics of Mercury and Venus, did they take any pics of the poles or did they just travel along the ecliptic? Would the sun look any different if we took a pic over the north or south pole or would it look just the same?
